The purpose of this Programme is to provide practical Culinary related modules, and modules relevant to the Hospitality and Catering sector equipping the student with the knowledge and skill to prepare, cook and finish a wide range of dishes under supervision in a professional kitchen.
Duration: 1 year
Qualification: Professional Cookery (City & Guilds)

– Prepare, cook and finish:
- Food for cold presentation
- Stocks, soups and sauces
- Fish and shell fish dishes
- Meat, poultry and offal
- Vegetables, fruit and pulses
- Rice, grain, farinaceous products and egg dishes
- Bakery products
- Hot and cold deserts and puddings
- Healthier foods and special diets
– Catering operations, costs and menu planning
– Culinary Arts Principles
– Food safety in catering
– Safety at work
Eligibility
– Statutory school leaving age
– Leaving Certificate or equivalent / Leaving Certificate Applied with a merit profile
– Full QQI Level 4 award with a merit profile
– Mature Applicants – experience will be considered in lieu of formal qualification
